3/4 c butter
1 c sugar
1/2 c brown sugar
2 eggs
1 tsp vanilla bean paste or 2 tsp vanilla extract
2 1/2 c all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
2 ripe bananas, mashed (about 3/4 c)
1/2 c almond milk
1 c walnuts, coarsely chopped
1/2 c mini semi-sweet chocolate chips
3/4 c cherries, frozen and coarsely chopped

Preheat oven to 375ºF. Line muffin tin with paper liners.
Cream butter and both sugars. Blend in eggs and vanilla.
Fold in flour, baking powder, baking soda, salt, and cinnamon.
Halfway through dry ingredients being folded in, add the banana and almond milk.
Do not over mix. Fold in walnuts, chocolate chips, and cherries.
Scoop into lined muffin tin and bake approx. 26 minutes or until toothpick inserted in the center of a muffin comes out mostly dry with just a few crumbs. You can also press the top gently to see if it bounces back or stays indented. If it springs back up, the muffins are done.
Remove from oven and let cool slightly before glazing.
 

Orange Glaze

Ingredients:

1 c icing sugar
1/4 tsp cinnamon
2-3 tbsp orange juice
1 tsp orange zest (optional)
1/4 tsp vanilla bean paste or 1/2 tsp vanilla extract

Whisk all ingredients together and adjust to desired consistency. Smear the tops of slightly cooled muffins with glaze and allow to set before serving.
