1/4 cup chopped onion
1/4 cup butter
1/4 cup flour
2-1/2 cups milk
5 cups peeled potatoes, thinly slices

Directions:
Directions:
Preheat oven 350 º.

To make sauce, cook onion in butter until tender, but not brown. Stir in flour, 1-1/2 teaspoons salt and 1/8 teaspoon pepper. Cook approximately 1-2 minutes. Add milk slowly, stirring to remove lumps. Cook and stir, on low heat, until thickened and bubbly. Cook and stir 1 to 2 minutes more. Remove from heat, place half of the sliced potatoes in a greased 2-quart casserole. Cover with half of the sauce. Repeat layers. Bake, covered, for 45 minutes, stirring once. Uncover and bake 30 minutes more or until potatoes are soft.

This is right out of the Better Homes & Garden Cookbook. I make 2 batches every Easter. I prepare the day before and just reheat (350 degrees for ~30 minutes) after the ham comes out of the oven.
