Meatballs:
Ground chuck 3 lbs.
Pork Sausage 2 lbs.
1t. sweet basil (to taste)
1 t. oregano
1 t. salt
bread crumbs
saute'd onion (saute in butter before adding)

Meatballs:Mix above items. Form into balls. In large pot, put extra virgin olive oil. Cook on medium until light brown. Scrape bottom. Keep adding balls. Add extra diced onion in the pot with the meatballs, sauteeing. Mix Sauce in.

(this is usually doubled or tripled)
28 oz. diced tomatoes (or crushed)
3 cans paste, rinsed with water and water added
red pepper crushed, to taste
2 T. oregano
1 bay leaf per pot
1 T. marjoram
1 1/2 T. sweet basil (not regular basil)
1 1/2 t. minced garlic

Simmer on low several hours. Stir bottom and be careful to not scorch.
