½ tbsp. vegetable oil
6 potatoes peeled and grated
¼ cup Matzo Meal
1 onion peeled and grated
3 large eggs
Seasoning

Heat oven to 175ºC. Grease a dish.

Whisk eggs,matzo meal and seasoning together and then add the grated potatoes and onions .

Pour in to the greased dish and cook for 40-50 mins.

My old friend Rochelle made this for us for lunch. Unfortunately the next day she died. Dad said it was the Potato Kugel so beware.
