½ cup onion chopped
½ cup celery chopped
½ cup onion chopped
1# fresh mushrooms sliced
½ cup mayonnaise
Salt and pepper to taste
2 eggs
1½ cup milk
4-6 pieces sliced bread cubed
1 can cream of mushroom soup
½ cup shredded cheese

Preheat oven to 350º. Sauté onion, celery, green pepper and mushrooms. Add mayonnaise and salt and pepper. Beat eggs and add milk and cream of mushroom soup. Grease baking dish. Arrange half of the bread cubes in bottom of baking dish. Add mushroom mixture then remaining bread cubes. Pour egg mixture over top. Bake for 50 minutes. Top with shredded cheese and bake for 10 more minutes.

I changed the recipe a bit because I couldn’t understand how to put a can of mushroom soup on top of this without diluting. Try it both ways!
