1 tbsp olive oil
1 package skinless smoked sausage, sliced into ˝ inch pieces
1 small onion, finely chopped
1 tsp minced garlic
1 (15 oz) can fire roasted tomatoes
8 oz uncooked penne pasta
1 ˝ cups chicken broth
˝ cup milk
1 cup shredded cheddar cheese

Directions:

1. Heat a large skillet over medium-high heat. Add oil, swirling to coat skillet.
2. Add sausage and onion in skillet and cook for 5-7 minutes, stirring occasionally. Onions should be soft and sausage should be starting to brown. Add garlic and cook for 1 minute.
3. Mix in tomatoes, pasta, chicken stock, and milk. Stir and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes until pasta is cooked.
4. Stir in cheddar cheese until melted.

This was one of the first recipes Brody and I made in our first apartment together. It was a hit…. As long as Brody didn’t put whole grain pasta in it!
