1 tbsp. olive oil
1 lb. chicken breasts
1 lb. smoked sausage, sliced into 1 inch pieces
3 cups heavy cream
4 cups chicken broth
4 tbsp. butter
2 tbsp. coarse cajun seasoning (I use "Slap Ya Mama" Cajun Seasoning)
1 tsp. minced garlic
1 lb. uncooked penne pasta
5 oz shredded parmesan
garlic powder, to taste
salt and pepper, to taste

Directions:
Directions:
1. Pat chicken breasts dry and season with salt, pepper, and garlic powder. Heat olive oil over high heat and quickly sear chicken breasts on both sides.
2. Add chicken breasts, sausage, heavy cream, chicken broth, butter, garlic, and cajun seasoning to crockpot.
3. Cook on low for 4 hours OR high for 2-3 hours, until chicken has reached 165º F.
4. Remove chicken and set aside to cool. Slice or shred according to your preference.
5. Stir in uncooked penne pasta. If sauce is too thick, add ½ cup hot water when adding pasta. Cook on high for approximately 30 minutes or until pasta is tender.
6. Once pasta is tender, stir in chicken, parmesan, and salt and pepper to taste. Add more cajun seasoning if desired.
7. Thicken sauce with corn starch slurry as needed.

This is a recipe I recently found online and it has become one of our favorites. If you are in a rush, you can omit the chicken entirely. I also like to add extra sausage. This is very similar to an alfredo sauce, but it has an extra kick of heat.
