1 c. heavy cream
1 c. half and half
1 (5 oz.) package Boursin Cheese with Herbs and Garlic, broken into small chunks
3 lbs. russet potatoes, peeled and sliced
2 tbsp. fresh chives, chopped
Salt and pepper, to taste

Directions:
Preheat oven to 400º F. Arrange a rack in the center position. Spray a 9x13-inch baking dish with nonstick cooking spray.

In a medium saucepan, combine the cream, half and half, and Boursin cheese, and heat over medium heat. Stir constantly until the mixture is smooth and cheese is melted. Remove the pan from heat and set aside.

Arrange half the sliced potatoes in overlapping rows in the baking dish. Generously season with salt and pepper and pour half the cream and cheese mixture over the potatoes. Repeat with the remaining potatoes and sauce.

Bake until potatoes are tender and nicely brown, about 55-60 minutes. Remove potatoes from the oven and sprinkle with chives to serve.
