swish of olive oil
5 cloves garlic, minced
2 hot peppers, minced
4 cups mirepoix
2 cups additional veggies (optional)
3 Tbsp cajun seasoning mix
28 oz fire roasted diced tomatoes
3 cups chicken or vegetable broth
12 oz Andouille sausage, sliced
1 lb raw tail-off shrimp

Roux:
8 Tbsp butter
½ cup flour
2 cups milk or chicken broth
heavy pinch of salt

Vegetables:
heat the oil in a big deep pot over medium heat.
add the garlic, hot peppers, mirepoix, and vegetables
saute for 10 min

Base:
add tomatoes, broth, spices
bring to a full boil, reduce heat & simmer for an hour for the best flavor

Roux:
melt butter over med heat
add flour & let bubble for a few minutes
add milk or broth a little at a time, whisking to incorporate & make smooth
season with salt

Finish:
add roux to gumbo pot & stir
let simmer or just let it all hang out for a while to help flavor develop
stir in sausage & raw shrimp
when shrimp is fully cooked, stir in a handful of chives

serve over brown rice or by itself
make sure to season with salt
