Ingredients: 1 bag white or brown rice 20 large fresh mushrooms 2 Tbsp butter or margarine 1/4 C finely chopped red pepper 1/2 C heavy cream 1/3 C crumbled blue cheese 1 Tbsp minced fresh basil 1/4 tsp ground white pepper Fresh chopped basil for garnish

Directions:Prepare rice according to package directions. Clean mushrooms and remove stems. Finely chop stems and set aside. In a medium skillet, sauté mushroom caps in butter until almost tender. Drain. Sauté mushroom stems and red pepper. Add cream and bring to a boil. Reduce heat and add cheese. Stir in rice, basil and pepper and cook until thoroughly heated. Spoon rice mixture into mushroom caps. Place mushroom caps in shallow greased baking pan. Cover and bake for 10 minutes. Drain and garnish with basil. |
