Shrimp & Crab Bisque Recipe

1 cup cooked shrimp - not sure why you can't just cook deveined & peeled shrimp in mix
1 cup crabmeat
3 TB unsalted butter
1/4 cup chopped green onion
1/4 cup diced carrots
1/4 cup chopped celery
3 TB all purpose flour
1 TB tomato paste
2+1/2 cups Whole Milk
1 cup heavy cream
2 TB dry white wine or dry sherry or brandy
1 bay leaf
1 seafood bouillon cube
1 chopped garlic clove
1+1/2 tsp OLD BAY Seasoning
salt & pepper to taste
sweet paprika optional garnish

Directions:
Directions:
Melt butter in a Dutch Oven over medium heat.
Add onions, carrots & celery & garlic. Cook on medium heat 2 to 3 minutes until tender (but not browned)
Add flour & stir with a wooden spoon until roux is made. Continue to cook for 2 to 3 minutes.

Heat up milk - but do not boil.
Add warm milk to roux stirring constantly so no lumps form.
Add Bay Leaf & Continue to simmer about 3 minutes on medium heat.
Add tomato paste, bouillon, OLD BAY & cream stirring constantly until smooth.
Take out Bay Leaf & blend if desired.
To have a creamy texture you can blend mix with a hand blender or carefully put into a blender.
Add shrimp & crab meat. Can use scallops & lobster meat instead if desired
Add white wine & mix well. Let mixture simmer for 3 to 5 minutes or until thick.

Taste & add salt & pepper as desired
Garnish with fresh parsley
If using - sprinkle paprika on top just before serving.
