2-4 Lb Sirloin tip, tri-tip, top round roast
2 T Olive Oil
2 tsp Paprika
2 tsp Kosher Salt
2 tsp Garlic powder *Not garlic salt
2 tsp Ground black pepper
1 tsp Oregano
1/2 tsp Thyme
1/2 tsp Cayenne Pepper or 1/4 tsp Chili powder

Personal Notes:
Double the Cayenne or Chili powder if you like it hot

Directions:
Combine all ingredients in a small bowl or a large measuring cup. Rub roast on all sides and place on foil lined baking pan. Let sit 15-30 mins.
Preheat oven to 400º F
Bake 20 mins then reduce oven temperature to 300º for an addition 20-60 mins. Check temperature after the first 20 mins. Remove from oven when temperature in the middle of roast has reached 145° or more. Let sit 15 more before slicing as thin as possible against or opposite direction of the grain. Meat cut into cubes will be very tough to chew
