2 cups okra cut in thin round pieces(may use fresh or frozen)
1¼ cups self-rising corn meal
½ cup all purpose flour
1 egg
½ cup chopped onions
1½ cups buttermilk
Salt and Pepper to taste
1 cup vegetable oil

Directions:
Directions:
Mix all ingredients except okra in a large bowl. Gently fold in the okra. Heat the oil to 350º in a large skillet. Drop batter (about a quarter cup) into the oil. Fry fritters for 2 minutes then flip with spatula, fry 2 minutes. Should be crusty, if not fry a little longer. Drain on paper towels.
