Rinds from 1/2 large watermelon
4 cups apple cider vinegar
2 cups water
2 cups sugar
1/3 cup kosher salt
1/2 tap. ground cinnamon
1 tsp. red pepper flakes

Directions:
Directions:
Prepare the rind by cutting it into 1-inch chunks, leaving 1/4 inch pink, and removing the green rind peeling.
Brine by adding vinegar, water, sugar, and salt in a 9-inch saucepan, bring to a boil and stir constantly. Once you reach a boil, add the watermelon rind and bring it to a boil again. Boil for 1 minute and remove from heat. Add cinnamon, and red pepper flakes and let the mixture cool for an hour. Keep in the refrigerator.
