2 (14 oz) cans hearts of palm, chilled, drained and cut in strips
1 head boston lettuce
Dressing:
1/2 c salad oil
2 tbsp fine chopped onion
2 tbsp fine chopped parsley
2 tbsp white wine vinegar
2 tsp lemon juice
1/2 tsp salt
1/4 tsp dry mustard
2 eggs, hard boiled and chopped fine

Directions:
Directions:
Combine dressing ingredients in a jar and shake well and chill overnite or few days. Place lettuce leaves on plates and lay palm slices on top. Pour dressing over palm strips when ready to serve
