4 or 5 large potatoes washed and cut into half moons1 large onion sliced into circles and then in half
9 eggs beaten very well

6 large tomatoes
2 guajillo chili pods washed and cooked with the tomatoes

SPICES:
1 teaspoon salt
1 teaspoon oregano
2 garlic cloves peeled
1 teaspoon cumin ground
1 chicken bouillon
dash of Johnny's seasoning'

Directions:
Directions:
Peel and wash potatoes, cut into half moons and set aside. Cut onion into thin round circles and then cut circles in half. First sauté onion in a fry pan with about 2 teaspoons of oil. May take about 10 minutes. When onions look clear add the potatoes. Be sure all water has been removed, dry with paper towel. Allow potatoes to cook covered, but keep moving them around so don't burn. Burner should be at medium heat. At this time you can shake a couple dashes of Johnny's seasoning all over the potatoes, lightly.

Now add the tomatoes to your blender, along with about 2-3 cups of the tomato water. Along with the tomatoes also add the guajillo pepper which cooked along with the tomatoes. Remember: keep checking the potatoes! Once they look clear, you can add the beaten eggs, and stir well until eggs look dry. Start blender and start adding all the spices, chicken bullion, oregano, cumin, garlic, and blend until very creamy, maybe even 4 or 5 minutes. Pour over a colander into the egg, and potato mixture. Stir a little bit and allow to cook covered for about 10 minutes. The skins of the tomatoes, and the chili pod, can be thrown away.
