1 gallon red beets
2 c sugar
2 sticks cinnamon
1 Tbsp Whole Allspice
3 1/2 c Apple Cider Vinegar
1 1/2 c water

Directions:
Directions:
Wash beets. Cook until tender then remove from skins. Cut into desired size and shape. Meanwhile, in large dutch oven heat syrup mixture. Add beets bring to a boil. Put beets into sterilized jars and process for 10 minutes to seal.
