1 c. butter
1 c. confectioners' sugar
2 tbsp. vanilla
1½ c. flour
1 tsp. baking soda
1 c. rolled oats

Directions:
Directions:
Place the butter in a large bowl and beat with an electric mixer on high speed for 1 minute, or until creamy. Add the confectioners' sugar and vanilla and mix on medium speed for 2 minutes, or until light and fluffy. Gradually add in the flour and baking soda and mix for 1 minute, or until smooth. Add the oatmeal and mix for 1 minute, or until completely combined. Refrigerate the dough for 10 minutes for easier handling.

Divide the dough into 3 equal pieces. Roll each piece into a 1½-inch diameter log. Wrap each log in plastic wrap and refrigerate for at least 3 hours.

Preheat the oven to 325ºF.

Cut the logs into ¼-inch-thick slices and place them about 2 inches apart on baking sheet. Bake for 8 minutes, or until they are lightly browned.
