One 3-4 pound boneless pork shoulder - cut into a few pieces

3 Tablespoons light brown sugar

3 teaspoons paprika

1 teaspoon mustard powder

1/2 teaspoon cumin

Salt and pepper

1 Tablespoon oil for sauteeing

1 cup apple cider vinegar

1 small can tomato paste

3-4 cups water

buns for serving

BBQ sauce for serving

Coleslow for serving

Mix paprika, mustard powder, 1 Tablespoon brown sugar, 2 teaspoons salt, 1 teaspoon pepper.

Rub mixture all over the pork

Turn Instant Pot to Sautee. Add oil. Once hot add the pork, one or two pieces at a time, browning on both sides--about 5 minutes

Turn the Pot to Warm, remove the pork and set aside

Whisk 1 cup water into the drippings in the Instant Pot--loosening them

Add vinegar, tomato paste, remaining brown sugar and 2-3 cups water and stir

Pressure cook the pork for 1 hour on Meat/Stew. Release the steam

Transfer pork to a bowl

Switch Instant Pot to Saute and simmer juices until reduced some--15-20 minutes

Meanwhile use 2 forks to shred the pork

Combine the pork back with the juices. Add more salt and vinegar to taste if you want

Serve with coleslaw, BBQ sauce and buns
