1 lb ground round
1 can (14.5 oz) diced tomatoes with basil, garlic, and oregano, undrained
1 10 oz can diced tomatoes and green chiles, undrained
1 6 oz can tomato paste
1 tsp salt
1/2 tsp dried Italian seasoning
1/4 tsp pepper
3 cups uncooked medium egg noodles
1 8 oz container sour cream
1 3 oz pkg cream cheese, softened
4 oz shredded sharp cheddar
4 oz shredded parmesan cheese (about 1 cup)
4 oz shredded mozzarella cheese

Brown ground round in a large skillet over medium heat, constantly stirring for 5-8 minutes, or until it is no longer pink and the meat crumbles, then drain.
Mix in both cans of diced tomatoes and the can of tomato paste, as well as the salt, Italian ssn, and pepper. Bring to a boil and reduce the heat. Allow to simmer, uncovered, for 5 minutes.
Remove from heat, then set aside. Preheat the oven to 350 degrees.
Prepare the egg noodles according to the package directions.
Mix the hot noodles, sour cream, and cream cheese until fully blended.
Spoon the egg noodle mixture into a lightly greased 13 x 9 baking dish. Top with the beef mixture, and sprinkle with cheese.
Bake, covered, for 35 minutes at 350. Uncover and bake for an additional 5 minutes. Allow to rest 10-15 minutes before serving.
