2 15oz cans of black beans, drained and rinsed
1 1/2 cups medium salsa, plus more for serving
1/2 tsp salt
8 tortillas (corn preferred)
4 eggs, fried over medium

Optional:
cotija cheese
cilantro
avocado
hot sauce

Directions:
Directions:
In a medium skillet, add black beans, salt, and 1 1/2 cups salsa.
Stir the mixture, bringing it to a simmer. Cook for 5-7 minutes, or until most of the liquid has been absorbed.
In a dry skillet set over medium heat, warm the tortillas until they are soft with brown edges.
On a plate, add the tortillas and top with 1 cup of the bean mixture and a fried egg
Add toppings (cotija cheese, cilantro, salsa, hot sauce, avocado) as desired.
