1 ½ cups wheat bran
1 cup buttermilk (coconut milk)
⅓ cup vegetable oil
1 egg (flax egg)
⅔ cup brown sugar (⅓ is plenty)
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

1. Preheat the oven to 350ºF.
2. Line muffin tins.
3. Soak bran in buttermilk for at least 5 minutes.
4. Beat oil, egg, sugar and vanilla together.
5. Add buttermilk and bran mixture.
6. Sift together flour, baking soda, baking powder and slat.
7. Stir dry ingredients into wet ingredients until just blended.
8. Fold in raisins
9. Spoon batter into muffin tins.
10. Bake for 15 to 20 minutes, or until a toothpick comes out clean.

Follow the parentheses to make it vegan with less sugar. The vegan version tastes great.

A flax egg is 1 tablespoon of ground flax soaked in 3 tablespoons of water for 5 minutes.
