Olive oil (enough to cover the bottom of a 10 inch skillet)
1 medium onion
3 cloves of garlic (chopped)
1 pound of black beans
Salt and pepper to taste

Directions:
Directions:
1. Rinse and sort black beans.
2. Place in pressure cooker and cover with enough water that it is 2 inches above the top of your beans.
3. Cook at high pressure for 30 minutes (this is for fresh dried black beans, older beans will take longer).
4. Allow to naturally release.

5. While beans are cooking place enough olive oil to coat the bottom of a 10 inch skillet.
6. Heat oil over medium heat.
7. Once hot, add the onions and sprinkle with salt, then cook until translucent.
8. Add the garlic and cook until fragrant.
9. Add oil, onions, and garlic to the pressure cooker and set to sauté.
10. Salt and pepper to taste.

Soaking beans overnight will change the cooking times, this is for beans that have not been soaked.
