½ Cup unsalted Butter, room temerature
1 Cup Sugar
1 Egg, room temp.
1 Cup mashed Bananas
1 tsp. Baking Soda
2 Cups Flour
pinch of Salt
½ tsp. Cinnamon
½ tsp. ground Mace or Nutmeg
½ tsp. ground Cloves

Optional - (1 Cup Pecans or Walnuts or Chocolate Chips )

Directions:
Preheat oven to 350º F. Cream butter & sugar until light & fluffy. Add egg & continue to beat until well mixed. Add in bananas & baking soda in a bowl and let sit for 2 minutes to froth for a bit. This will make the cookies rise. Mix banana mixture into the butter mixture. Combine flour, salt & spices into the above mixture until just combined.
Fold in nuts or chips if using. Drop into dollops onto a parchment paper lined baking sheet. Bake for 11 -13 minutes or until nicely golden brown. Cool on wire racks.

These take scrumptious with Cream Cheese Icing or by themselves. My daughter Dallas found this recipe and I have to admit I don't remember eating Banana Cookies.
Now I look forward to making them when I can.
