1-2 tablespoons olive oil
1 onion (diced)
2 ribs of celery (diced)
2 carrots (chopped)
8 ounces of diced ham
1 pound of dry split peas (sorted and rinsed)
4 cups of low sodium chicken broth/stock
1 chicken bullion cube (I like Maggi or Knorr)
2 cups of water
2 bay leavevs
Kosher salt and black pepper
8 ounces of diced butternut squash (optional)

Directions:
Directions:
1. Sauté (in pressure cooker) the onions, celery and carrots until softened (about 5 minutes)
2. Add split peas, chicken broth/stock, ham, bay leaves, water, and bullion cube.
3. Turn off sauté.
4. Put lid on pressure cooker, ensure it is sealed, and set to manual high pressure for 15 minutes.
5. Allow to naturally release at least 10 minutes.
6. Stir to bring everything together and add salt and pepper to taste.
