1 1/2 c / 180g flour
3 tsp baking powder
1 tsp salt
3 TB cold butter, divided
1 c / 125g grated Cheddar
1/2 c finely diced onion
1 egg, beaten
1/2 c milk

Directions:
Directions:
Preheat oven to 400º.

Mix flour, baking powder, and salt in a large bowl. Cut in 2 TB butter. Add half the cheddar.

Fry onion in 1 TB butter until clear and golden.

Stir together egg and milk, add onion. Stir into dry ingredients. Turn into a greased 8x8 pan. Top with remaining cheddar. Bake for 25 minutes. Serve hot.
