2 c. red cherry tomatoes
2c. yellow cherry tomatoes
2 T. olive oil
2 T. balsamic vinegar
1 tsp. salt
1/2 tsp pepper
1 clove garlic, minced
1 T. chopped fresh tarragon, basil or parsley

1/2 tsp. sugar
4 c. baby arugula or baby spinach

Directions:
Directions:
Toss first 8 ingredients in a large bowl.
Spread on a parchment lined baking sheet.
Sprinkle with sugar.
Roast in a 400º oven for 12-15 minutes, or until tomatoes are starting to burst.
Place arugula or spinach on a platter or in a bowl. Spoon warm tomatoes and their juices over the greens.
