2 cups all-purpose flour
One Cup granola without raisins
2/3 cup Sugar
3 tsp. baking powder
1 tsp. salt
2/3 tsp. ground cinnamon
¼ tsp. ground nutmeg
2 large eggs, room temperature
2/3 cup unsweetened apple juice
¼ cup Vegetable oil
1 ½ cup peeled apples grated

Directions:

1. In a large bowl combine the first seven ingredients. in another bowl, with eggs, apple juice, and oil. stir into dry ingredients just until moistened come on then fold in the apples.
2. Fill 12 greased or paper-lined muffin cups 3/4 full. Bake at 400 ͦF for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

When running out a muffin mix, and needing to come up with a recipe by improvising with what ingredients I had. I was thrilled with the results is I love that they keep in the freezer so well, so they're on hand at any time unexpected company comes.
