3 ½ Tbsp. oil (divided)
1small onion diced finely
1/4 c. flour
1/4 c. cornmeal
1/2 tsp baking powder
1/4 tsp. salt
1 egg, beaten
2/3 c. grated cheddar (divided)
1/2 c. sour cream
1/2 c. creamed corn
2 T. finely chopped jalapeno chilis (jar)



Directions:
Directions:
Sauté onion in 1 ½ T. oil
Combine dry ingredients and set aside.
Combine beaten egg, sour cream, creamed corn, 1/3 c. cheese, jalapenos, 2T oil
and sauteed onion.
Fold in dry ingredients.
Spread in greased 8x8 pan.
Top with 1/3 c. cheese.
Bake at 350º for 35 minutes.
Cool until warm and cut into squares.
Serve warm.
