1 c. bourbon
1 c. soy sauce
½ c. brown sugar
1 tsp. paprika
Pinch hot red pepper flakes
1 tbsp. molasses
3 cloves garlic, smashed
2 tbsp. finely grated ginger
1½ tsp. onion powder
1½ tsp. garlic powder
6 each chicken thighs and drumsticks
Salt and pepper, to taste

Combine all ingredients except chicken to make the marinade. Process in a blender, if easier. Set aside ½ c. of marinade. Keep refrigerated.

Put marinade in a plastic resealable bag with the chicken and coat the chicken pieces. Marinate in the refrigerator for 6-12 hours, turning occasionally.

Remove the chicken from the marinade and drain. Allow to sit at room temperature until the grill heats up. Grill over medium-high heat for 5 minutes. Leave grill lid open. Then reduce the heat and close the grill cover. Continue cooking over low heat for 15-20 minutes until the chicken reaches 165º F. Baste with fresh marinade every few minutes, turning chicken to cook both sides evenly.

Add salt and pepper, as desired.
