1/4 c. pure maple syrup
2 Tbsp. Brown Sugar
4 Tbsp. Salted butter, melted
8 Lg. eggs, beaten
1 can (14 oz) full fat unsweetened coconut milk
3 Tbsp. Bourbon (optional, but highly recommended)
1 Tbsp. Pure Vanilla extract
2 tsp. ground cinnamon
1/2 tsp. kosher salt
1 brioche or challah bread loaf, cut into thick slices.
2 Tbsp. Salted Butter, at room temp.

Directions:
Grease 9 x 13 baking dish. In baking dish, using a fork, mix together the maple syrup, 1 Tbsp. of sugar and the belted butter.

In a large bowl, whisk together the eggs, coconut milk, bourbon, vanilla, 1 tsp. of cinnamon and the salt. submerge each piece of bread into the egg mixture, allow them to soak for at least 1 minute. Arrange the bread in the prepared baking dish, and pour the remaining egg mixture evenly over the slices.

In a small bowl, using a spatula, combine the 2 Tbsp. softened butter, 1 Tbsp of sugar and the remaining 1 tsp. of cinnamon. Evenly dollop the butter mixture over the bread in the baking dish. Cover with foil or plastic wrap and place in the fridge for 1 hour to overnight (You can also just bake right away, I do this).

When ready to bake, preheat the oven to 375 degrees.

Bake until the french toast is golden and crisp., 45-50 minutes. If the tops of the break begin to brown too quickly, loosely cover the French toast with foil and conitnue baking.

Serve the French toast warm topped with Jam, Syrup and whipped cream.

Notes: I add Dried Cherries and chopped apple to the custard. You can soak the dried cherries and apple in a little bit more the bourbon prior to adding to the custard.

You can also cube the break vs. slides for more of a bread pudding. When I do this I mix the bread cubes and custard in a bowl before adding to the baking pan. I also add a lilltle more brown sugar and butter to the custard to make a bit more sweet.

This is one of my favorite recipes and make it at least once a month if not more. Always a hit.
