1 Tablespoon flour
1/2 teaspoon salt
3 eggs
1 1/2 cups mashed pumpkin
1 cup milk
cinnamon

Directions:
Remove seeds and membrane from the inside of a medium/small pumpkin, remove skin from outside with a vegetable peeler, or knife, and cut pumpkin meat into 2" cubes. Steam cubes for about 10 - 15 mins until a knife can be inserted with little resistance. Mash the cubes and let cool. Set aside 1 1/2 cups of the meat per 9" pie - any extra can be frozen.

Combine the sugar, flour and salt. In separate bowl combine eggs and milk and add to dry ingredients. Stir in pumpkin. Pour in 9" pie shell. Sprinkle cinnamon on top. Bake at 400 for 50-60 minutes or until knife comes out clean.
