Hot Roast Beef with Gravy Recipe

1 tbsp cooking oil
3 to 4 pounds beef rump roast, about 2-2 1/2 inches thick
1/2 tsp Creole or Cajun seasoning
1/4 tsp garlic powder
2 tbsp four
2 (10 1/2 ounce) cans condensed beef consomme
2 cups chopped onion
2 sprigs fresh rosemary
1 bay leaf
2 tbsp water
1 heaping tbsp cornstarch
1 tbsp butter

Heat oil in Insta pot on browning setting

Sprinkle the roast with cajun or creole & garlic seasoning and rub in

Sprinkle with flour on all 4 sides of roast

Brown in the insta pot on all 4 sides

Add onion, rosemary & Bay leaf

Seal Insta Pot and set to high pressure, and cook for 60-75 minutes, let pressure release naturally

Remove roast and set aside, tent it with tin foil to keep it warm

Skim the thin layer of fat from the juices in the Insta Pot, discard

Bring drippings to a boil, and mix the water and cornstarch in small bowl, add to juices, stir in well

Let cook for about 3 minutes, until gravy is thickened, add the roast back, either whole or shredded

Serve with mashed potatoes, and your favorite side dishes
