-18oz Package Soft Tortillas
-4 32oz boxes or cans of low sodium Chicken Broth
-Bones and Meat from a 4lb grilled or roasted Chicken
-2 Large Red Onions, coasely chopped
-4 Large Tomatoes
-4 Medium Jalapenos, sliced
-Juice of two Limes or 1/2 C. Lime Juice
-4 Ears of Corn grilled
-1 C. Fresh Cilantro Leaves
-2 Ripe Avocados peel and cubed
-16oz Crumbled Feta Cheese

Preheat oven to 350*. Cut the tortillas into 1/2 inch strips. Arrange on a baking and bake for 8 to 10 minutes till crispy. In a large sauce pan, simmer the chicken meat and bones in the chicken broth for 20 minutes. Strain broth through a colander into another sauce pan. When bones are cool enough to handle, pick off any meat and add it to the broth. Stir in the red onions, tomatoes, jalapenos, and lime juice. Heat for 5 minutes. Cut corn off the cobs and add it to the soup.
Divide the tortilla strips among the soup bowls. Ladle in the soup and top with cilantro, avocado, and feta cheese.

To save time you can substitute tortilla chips for the soft tortillas, and 4 cups of frozen corn for grilled corn.
