1 lb shrimp, peeled & deceived
4 T butter, divided
2 eggs, whisked
2 medium carrots, peeled & diced
1 small onion, diced
½ cup frozen peas
3 cloves garlic, minced
Salt & pepper
4 cups cooked and chilled rice
3 green onion, thinly sliced
3-4 T soy sauce
2 t oyster sauce
½ t toasted sesame oil

Directions:
Directions:
In a wok or large saute pan, heat 1 T butter on medium heat. Add shrimp in single layer turning when beginning to brown, about 2-3 min. Cook another 2 min on other side or until cooked through and opaque. Set shrimp aside.
Add ½ T butter to wok or pan until it melts. Add egg and cook until scrambled, stirring occasionally. Remove egg and transfer to a separate plate.
Add an additional 1 T butter to wok until melted. Add carrots, onion, peas and garlic, and season with a generous pinch of salt and pepper. Saute for about 5 min or until the onion and carrots are soft. Increase heat to high add remaining 1½ T of butter, and stir until melted. Immediately add the rice, green onions, soy sauce and oyster sauce and sir until combined. Then add in the egg and shrimp and stir to combine. Remove from heat and stir in sesame oil. Season with more soy sauce if needed.
