6 cups (3 cans) sweet potatoes, warmed
1/2 stick butter, room temperature
1/3 cup brown sugar
1 tsp. vanilla
1 sm can crushed pineapple
1 egg, beaten
1 bag miniature marshmallows
Directions:
Directions:
Mash heated sweet potatoes drained and butter together until butter is melted and then add sugar mixing it all up. Add the pineapple and egg, mixing well. Let the casserole sit overnight in the refrigerator to blend flavors together. Bake in a preheated 350ºF oven for 45 minutes. Sprinkle marshmallows over the top during the last 10-15 minutes of baking.
