4-5 c water
1/2 c Mirin
1/2 c Soy sauce Kikkoman Shoyu
4 t Hon-Dashi (Bonito Soup Stock)
1/4 t Sake (cooking variety)
1/2 medium onion cut in 2" pieces
1 C cut shitake mushrooms
1/2 lotus flower 1/4" sliced and cut into quarters
( other vegetables such as broccoli red or yellow peppers)

Soba noodles or Udon noodles. Udon is most common

Fresh chopped green onion ( set aside)

Add all ingredients in a 5 quart sauce pan. Bring to a boil for 1 minute and then let simmer. (Do not boil too long) At the same time, prepare Udon or Sobe noodles in a separate sauce pan by cooking the noodles in boiling water for 7 minutes. Wash the noodles when they are done so they don't stick together. When the vegetables in the soup are softened slightly, the alcohol is cooked off, and the noodles are cooked; put the noodles in individual serving bowls and ladle the soup over them. Top with fresh chopped green onion.

Anna and Kosuke showed me how to make this soup on his first visit with Anna at Christmas 2021. He says it is a very standard Japanese food. It is delicious! Different from any American soup. You have to find the ingredients in an Asian Market. He warns: Don't over boil the soup or it will loose all its flavor but be sure to cook it long enough to cook off the alcohol so it can deeply flavor the soup.

You could add some cooked chicken or shrimp cut in small bites.
