1/2 onion, chopped
4 cloves garlic, minced
1/4 cup flour
8 cups low-sodium chicken stock
2 medium russet potatoes, baked and cubed
1⁄2 cup heavy cream
Salt and black pepper to taste

Directions:
Directions:
Heat 1Tbsp olive oil in a large soup pot over medium heat.
Add the onion and garlic to the pot and cook until tender.
Add the flour to 1/2 cup of the broth and whisk until smooth.
Pour in the pot, whisking to help prevent any lumps from forming.
Add remaining broth and heat to simmer.
Add cubed potatoes to the soup, along with the cream
Season with salt and pepper.
Simmer for 5 to 10 minutes and serve.

Approximately 130 calories per cup.
*For more flavor (and more calories) add fried, chopped bacon, ham and/or cheddar cheese.
