4 Boneless, Skinless Chicken breasts
1 T. oil

2 c. sliced mushrooms (10-12)
2 T. butter

salt, pepper, paprika

8 slices of bacon, fried

1 c. monterey jack & 1 c. cheddar cheese, shredded

HONEY-MUSTARD SAUCE:
-1/2 c. Grey Poupon Dijon mustard
-1/2 c. honey
-1 1/2 t. oil
-1/2 t. lemon juice

Directions:
Directions:
Use electric mixer to combine honey mustard. Pour 2/3 of marinade over chicken breasts, cover, and refrigerate for 2 hours. Chill remaining marinade.
Sear chicken in oil, and saute' the mushrooms in butter. Brush chicken with marinade. Season the chicken with salt, pepper, and paprika. Bake at 300 for 1 1/2 hours. Stack 2 pieces of bacon crosswise on each chicken breast. Spoon mushrooms on, then spread cheese on and back until cheese is melted, then sprinkle parsley on just before serving.
Can also marinade it in Italian Dressing
