1 sm butternut squash, cubed
2 bell peppers, seeded and diced
1 sweet potato, peeled and cubed
3 potatoes, cubed
1 red onion, quartered
1 T fresh thyme, chopped
2 T fresh rosemary, chopped
1/4 c olive oil
2 T balsamic vinegar
Salt and freshly ground black pepper

Directions:
Directions:
Preheat oven to 475º. In a large bowl, combine the sweet potato and potatoes. Separate the red onion quarters into pieces and add them to the mixture. In a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt and pepper. Toss all but 2 T with potatoes and onions until they are coated. Put 2 T of dressing on the bell peppers, squash and garlic in a separate bowl. Spread evenly on a large roasting pan. Roast for 35 to 40 minutes int he preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned. when you have about 15 minutes left, add squash, red bell peppers and 2-3 chopped garlics.
