1½ lb. dried kidney beans, rinsed and drained
3 cups water
2 cups beef stock (homemade, canned, or from cubes)
¾ lb. boneless pork, cut in small pieces
¾ lb. ham steak, with bone
1 medium onion, peeled and chopped
4 cloves garlic, peeled and chopped (optional)
1 bay leaf
½ lb. Spanish chorizo or good Mexican chorizo, cut in ¾ in. pieces (fresh Italian sausage works well, too)
Salt and pepper to taste

Put the beans and at least twice much water into a heavy 8-quart pot. Cover the pot and bring it to the boil. Turn off the heat and let it sit for one hour. Drain the beans and return them to the pot. Add all of the other ingredients except the chorizo (or Italian sausage), salt, and pepper. Bring the whole shebang to a boil and simmer for one hour. Add the chorizo (or Italian sausage) and simmer uncovered for 20 minutes, stirring occasionally. It’s done when the beans are very tendered and the liquid has thickened.
