2½ C. flour
1½ C. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cocoa powder
1½ C. vegetable oil
1 C. buttermilk, room temperature
2 large eggs
2 TBSP red food coloring
1 tsp. vinegar
1 tsp. vanilla
Crushed pecans

Frosting:
1 lb. cream cheese
4 C. powdered sugar
2 sticks butter (1 C.)
1 tsp. vanilla

Directions:
Directions:
Sift together flour, sugar, baking soda, salt, and cocoa powder. In a different bowl, whisk oil, buttermilk, eggs, food coloring, vinegar, and vanilla. Mix dry and wet ingredients until smooth batter is formed. Divide batter evenly into cupcake pans. Bake at 350º for 30 minutes or until toothpick comes out clean. (Rotate pans halfway through) Cool completely. For frosting, mix all ingredients together and beat until smooth. Frost and sprinkle the pecans on top.
