1/4 c sake
1/4 c mirin
1/4 c white miso paste
3 T sugar
4 (8 oz) black cod filets

2-3 days before make marinade and marinate the fish. Bring sake and mirin to boil in saucepan over high heat. Boil 20 sec then turn heat to low and add miso and whisk. When dissolved complete turn heat to high again and add sugar, whisk constantly. When full dissolved remove from heat. Cool to room temp.
Pat fish dry with paper towels. Slather with marinade and put in non reactive dish or bowl, cover tightly with plastic wrap. Marinate in fridge for 2-3 days
To cook: oven 400º. Heat oven proof skillet over high heat on stove. Lightly wipe off excess miso clinging to fish but don’t rinse off. Add a little oil to pan and place fish skin side up and cook until brown and blacken in spots about 3 min. Flip and cook another 2-3 min. To oven and bake for 5-10 min until fish opaque and flakes easily
