1 eggplant, peeled and sliced thin
1 container dry Parmesan cheese
1 egg
Pasta sauce
Mozzarella or provolone cheese

Directions:
Directions:
After slicing eggplant, place in hot, salty water to soak at least 30 minutes.
Drain on paper towels.
Mix egg with small water and whisk well.
Dip eggplant in egg mixture the coat with parmesan cheese.
Place on a cookie sheet that has been lined with parchment paper.
When cookie is full, bake at 450º for 15-20 minutes. Flip over and bake another 10-15 minutes.
Place layer of eggplant in casserole dish. If you want you can put a layer of cheese here. Pour some pasta sauce over top. Repeat layer of eggplant and sauce.
Bake 350º for 20-30 minutes or until hot and bubbly.
