Directions:
Prepare meat for cooking by cleaning thoroughly. Place a combination of the following inside the meat:

Apples, onions, garlic (we use a generous amount of garlic), lemon, celery, wine (a lot of wine), almost anything to your liking. Place meat on a spit and cook over an open fire. Fire should have been started long before to acquire mostly hot coals. Keep adding wood to keep fire hot. If an electric spit is not available, someone needs to turn the spit during the cooking process.

Cooking crew should be able to sample the wine used in cooking. Sometimes they even taste the beer and whisky during the process of turning the spit!
