1 C. yellow cornmeal
2 tsp salt
1 lb. extra lean ground beef
⅓ C. chopped onion
2 cloves garlic, crushed
1 can (6oz) tomato paste
1 can (1 lb.) tomatoes
1 tsp sugar
½ tsp. oregano leaves
Dash pepper
½ C. finely shredded sharp cheddar cheese
Chopped parsley

Mix 1 C. cold water with cornmeal, and 1 tsp. salt in bowl. Bring 2½ C. water to boil in heavy saucepan. Stir in cornmeal mixture and bring again to boil, stirring until thickened. Cover and simmer stirring occasionally - about 5 minutes. Pour in slightly oiled 8" square pan and chill several hours, overnight or until firm. For sauce, lightly brown meat in kettle or Dutch oven. Add remaining salt, ¾ C. water, and other ingredients (except cheese and parsley). Bring to boil, cover, and simmer stirring occasionally - about 30 minutes.

Shortly before baking, cut cornmeal in 12 to 16 cubes. Place the cornmeal cubes in casserole. Alternate layers of cornmeal with meat sauce until gone. Sprinkle top with cheese. Bake in 350º oven 25 to 30 minutes. Garnish with parsley.
