1/2 c. olive oil
1/3 c. fresh lime juice
2 tsp. chili powder
2 tsp. chopped garlic
1 tsp. ground cumin
4 c. diced cooked chicken (about 1 lb.)
1 red bell pepper, chopped
3/4 c. chopped onion
3/4 c. chopped fresh cilantro
1 T. chopped, seeded jalapeno chili

Directions:
Directions:
Whisk first 5 ingredients in large bowl to blend. Mix in chicken, bell pepper, onion, cilantro and chili. Season chicken salad with salt and pepper. Serve on a bed of lettuce, garnished with tomato wedges; with tortillas; or as a sandwich filling. Yield: 4 servings.
Note: Can be prepared 1 hour ahead. Cover and refrigerate.
