1 lb shrimp
3 T EVOO
1 T. Lemon Zest
1/2 t. red pepper flakes
Salt & Pepper
4 cloves garlic (minced)
2 T. unsalted butter
1 c. orzo
1/3 c. dry white wine
2 c. boiling water
3 T. parsley (chopped)

Directions:
Directions:
Combine shrimp, 1 T. EVOO, lemon zest, red pepper flakes, 1/2 t. salt, 1/4 t. pepper and half of the garlic in a bowl and set aside to marinate. This step can be done up to 1 hour prior to cooking.

Add butter, remaining EVOO and remaining garlic to a medium skillet set over medium heat. When butter starts to bubble, add the orzo, 1/2 t. salt and cook, stirring often until the orzo is toasted (approx. 2 min). Add wine and stir until absorbed (approx. 1 min). Stir in water, reduce heat to low, cover and cook until orzo is al dente (approx. 12 min.).

Add shrimp in a snug layer on top, cover and cook until all shrimp is pink and cooked through (approx. 2-4 min.). Remove from heat and let sit for 2 min. Sprinkle with parsley & serve immediately.
