Beef flank, trimmed
Chopped onion
Garlic powder
Allspice
Salt & pepper

Directions:
Spread onion and spices over the beef flank. Roll up like a jellyroll, and sew up ends and openings. Tie or wrap with heavy cord. Put roll in kettle. Add water to cover and bring to a boil. Simmer slowly, until tender (4 to 6 hours). Remove from kettle and press under a weight several hours or more. (Add seasonings to your own liking.)
Soak in Tenderquick brine of 1 cup Tenderquick to 3 parts water. Soak 4 to 6 days in refrigerator. Not necessary to soak, your choice. If you do soak your roll, use no salt in your spice mixture.
