1 medium eggplant
1 cup flour
1 tsp baking powder
2 tsp Italian seasoning
1 tsp onion powder
2 eggs beaten
2/3 cup milk
1 TBsp oil

Directions:
Directions:
Slice peeled eggplant into finger strips
Sprinkle with salt, cover with water and soak 1 hour
Drain and pat dry
Combine flour, baking powder, and seasonings in a mixing bowl. Add eggs, milk, and oil, beat until smooth. Dip strips into batter and fry in about 1 inch oil in skillet until brown.
